
These salmon bites come together quickly, but are a fabulous appetizer for any day of the week! All Sitka Salmon Shares fish is sushi-grade and safe to eat raw, we prefer these little bites medium-rare.

Ingredients
- 1 tablespoon olive oil
- 1/2 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup white wine
- 1/3 cup soy sauce
- 1 tablespoon orange juice
- 1 tablespoon honey
- 1 1/2 - 2 pounds salmon, cut into 2-inch cubes
- green tops of scallions, cut on the bias (see note)
Directions
Marinate
In a medium bowl, mix together everything but salmon and green onion. Submerge and marinate salmon pieces in sauce for 3-5 minutes.
Make Garnish + serve
Cut the green tops of scallions into long thin slices (cut on a hard diagonal), and submerge in ice water for a few minutes.
Grill just until fish is opaque throughout. Skewer salmon bite on a decorative toothpick, and top with curly green onion.
Note: to cut "on the bias" means to cut something on a hard diagonal angle. For scallions, this produces long, thin strips.
