Dawn Young

Dawn Young, the co-captain of the F/V Bella Dawn, is the matriarch of one of our larger fishing families. She and her husband Mark come from a long line of fishermen and have raised their kids on the boat as well. They place a high value on knowing where their food comes from. In fact, Dawn sites it as the main reason she likes fishing for Sitka Salmon Shares — She wants to know that their catch is going to community members that appreciate its origins. She is happy to pass on recipes as well, this one for a simply prepared rockfish. It can be prepared quickly after a long day at the office, or even a long day on the boat!

  • 1 pound rockfish fillet
  • 1 tablespoon chopped dill
  • ⅓ cup sour cream
  • ⅓ cup mayo
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon pickle juice
  • 1 bunch broccolini
  • 1 tablespoon olive oil
  • 2 cloves garlic, sliced
  • Salt & pepper to taste

Prepare Rockfish

Preheat oven to 350°.

Sprinkle the rockfish fillets with salt, pepper, and dill on both sides.

Prepare Sauce

Mix the sour cream, mayo, Parmesan cheese, and pickle juice together.

Bake Rockfish

Place fish in a baking dish and spread mayo mixture on top.

Bake 20-25 minutes until rockfish is cooked through and the top is a little browned.

Brown Garlic

In a large sauté pan, heat olive oil over medium heat while the rockfish is baking. Sauté garlic slices until golden brown, about 2-3 minutes. Remove garlic slices from pan.

Saute Broccolini

Add broccolini to the pan and sauté 3-4 minutes until bright green. Add 2 tablespoons water and cook until broccolini is cooked through and water is evaporated. Season with salt & pepper.

Sprinkle garlic slices over the broccolini and serve alongside the rockfish

Dawn's Pro-Tip: The sour cream and mayo help protect the fish from overcooking, so don’t stress out too much over the perfect cooking time.
