King Salmon with Strawberry Avocado Salsa | Sitka Salmon Shares
Ingredients
- For Salmon:
- 4 (8-ounce) king salmon fillets
- 1 garlic clove, minced
- Juice of 1 lime
- Salt and pepper, to taste
- 2 tablespoons grapeseed oil
- For Salsa:
- 1 pint strawberries, hulled and diced
- 1 avocado, diced
- 1 shallot, minced
- 2 tablespoons cilantro, chopped
- Juice of ½ lime
- 2 tablespoons olive oil
- Salt and pepper, to taste
Directions
For the salmon, stir lime juice and garlic together. Pour over salmon and marinate for 20 minutes.
For the salsa, combine strawberries, avocado, shallot, cilantro, lime juice, and olive oil in a bowl. Season with salt and pepper.
Dry salmon with a paper towel, and season with salt and pepper.
Heat large nonstick skillet to medium-high and add oil. Add salmon, flesh-side down, and sear until golden brown and cooked about half way through (about 4-5 minutes). Gently flip and sear until skin is crisp and golden and fish starts to flake (about another 4-5 minutes). Set aside to rest.
Serve king smothered in summertime salsa!
