Easy Baked Cod
- 2 (8 ounce) pacific cod or lingcod fillets
- 6 tomatillos, roasted
- 2 garlic cloves, minced
- 1 teaspoon cumin
- Salt and pepper, to taste
In a blender, puree the tomatillos, garlic, cumin and salt and pepper and pour into a glass or enamel baking pan. Season the cod on both sides and lay the pieces in the pan. Spoon the sauce over the cod. Bake at 400°F for 15-20 minutes until the fish begins to flake.
