Bacon-Wrapped Halibut Tacos with Pineapple Salsa and Ginger Garlic Barbecue Sauce | Sitka Salmon Shares

Ingredients

  • Pineapple Salsa:
  • 2 cups pineapple, ½-inch dice
  • 1/2 cup spring onions or scallions, thinly sliced
  • 1/2 cup red pepper, 1/2 inch dice
  • 1 tablespoon flat-leaf parsley, minced
  • 1 lime, juiced
  • Salt and pepper, to taste
  •  
  • Ginger Garlic Barbecue Sauce:
  • 1 tablespoon garlic , minced
  • 1 teaspoon grated ginger (we think a microplane works best)
  • 1 tablespoon olive oil
  • 1 cup ketchup
  • 1/4 cup mustard
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon molasses
  • Salt and pepper, to taste
  •  
  • Bacon-Wrapped Halibut:
  • 12-16 pieces of good bacon
  • 1 pound of halibut, cut into cubes roughly the thickness of your bacon toothpicks
  • 1 ounce manchego cheese, grated
  • 8-12 flour tortillas

Directions

Pineapple Salsa

Combine in a large bowl. Set aside. This can be done the night before.

Barbecue Sauce

Sauté garlic and ginger in a small sauce pan over medium heat for one minute. Add the remaining ingredients and bring to a boil. Reduce heat and simmer sauce for 5 minutes. Set aside to cool.

Bacon-Wrapped Halibut

Wrap each piece in a slice of bacon, ensuring the bacon is wrapped all the way around the halibut with a little overlap.  Depending on how big the halibut piece, this will require somewhere between 2/3 and 3/4 of a slice of bacon. Attach the bacon to the halibut (and to itself) with a toothpick.

Sear bacon-wrapped halibut for 2-3 minutes a side over medium-high heat. Cover the pan with a lid after flipping to ensure the halibut cooks through. When all pieces of bacon have browned, baste with barbecue sauce, turning to coat.

Taco Assembly

Nestle two pieces of halibut in a flour tortilla, drizzle with extra barbecue sauce and top with pineapple salsa and Manchego cheese to taste.
