Slow-Roasted King with Cauliflower Purée and Green Beans

We emphasize the richness of king salmon with this classic French-inspired dish. The green beans provide a nice crisp lightness to contrast the melt-in-your-mouth goodness of the salmon and cauliflower. This one is elegant enough for a weekend dinner, but still easy enough for a weeknight meal.

Ingredients:

Salmon:
4, 8 oz king salmon fillets
2 tablespoons olive oil
salt and pepper, to taste

Beans:
1 pound French string beans, trimmed
1 shallot, minced
1 clove garlic, minced
2 tablespoons olive oil
salt and pepper, to taste

Cauliflower:
1 head cauliflower, cooked
1 tablespoon olive oil
1 shallot, minced
1 clove garlic, minced
3 tablespoons butter
salt and pepper, to taste

For the salmon:

Preheat oven to 300°F. Rub salmon down with olive oil and season generously with salt and pepper. Arrange on a foil or parchment lined baking sheet or pan. Roast for approximately 25 minutes until fish just begins to flake. If you use smaller portions, be sure to check the fish after 15-20 minutes to ensure it is not overcooked.

For the beans:

Boil water in a large pot. When water is at a rolling boil, season generously and drop in string beans. When string beans are tender, but not soft, remove from water and shock in an ice bath or rinse with cold running water. Sauté shallot for approximately one minute. Add garlic, cook until fragrant, about 30 seconds. Add string beans, tossing to coat in the oil. Season as needed.

For the cauliflower:

In a small sauté pan, sauté shallot for approximately one minute. Add garlic, cook until fragrant, about 30 seconds. In a food processor, add cauliflower in pieces, shallot, garlic and butter. Process until completely smooth. Season as needed.

Plating:

Serve king salmon over cauliflower purée and green beans.
