King Salmon with Strawberry Avocado Salsa

Two of my favorite things from summer are salmon and delicious fresh berries; I’ve also eaten 6 avocados in one sitting. This recipe is a perfect combination of a few of my favorite ingredients and they happen to get along pretty well on a plate. Sweet, bright and acidic strawberries paired with lime juice balance out the fatty fish and buttery avocado. A little raw shallot adds some sharpness and I could definitely understand a little jalapeño tossed into the mix as well. Happy summer eating, you guys. ~Chef Ali


1 garlic clove, minced
juice of 1 lime
salt and pepper, to taste
4 8-ounce king salmon fillets
2 tablespoons grapeseed oil

1 pint strawberries, hulled and diced
1 avocado, diced
1 shallot minced
2 tablespoons cilantro, chopped
juice of ½ lime
2 tablespoons olive oil
salt and pepper, to taste


For the salmon:
Stir lime juice and garlic together. Pour over salmon, and marinate for 20 minutes. Dry salmon with a paper towel, and season with salt and pepper. In a large nonstick skillet heated over medium-high heat, add oil. Add salmon, flesh-side down and sear until golden brown and cooked about ⅓ way through, about 4-5 minutes. Gently flip fish and sear until skin is crisp and golden and fish starts to flake, an additional 4-5 minutes. Set fish aside to rest.

For the salsa:
Combine strawberries, avocado, shallot, cilantro, lime juice, and olive oil in a bowl. Season with salt and pepper.
