Sesame Lingcod Fish Sticks

This recipe comes from a cookbook salvaged from the “free” pile of a Sitka garage sale. The book—Alaskan Pioneer Cookbook: Old Alaskan Recipes and Interesting Stories—is full of simple, tried­-and-true preparations, culinary advice, and short anecdotes. The original recipe calls for halibut, but we had great results using lingcod; its milder flavor and delicate texture creates a lighter dish.

1 pound lingcod, cut into 1-by-¾ inch long strips
⅓ cup flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ginger
1 egg, slightly beaten
½ cup sesame seeds

2 tablespoons soy sauce
1 teaspoon honey


Preheat oven to 450°F.

Mix flour, salt, pepper, and ginger. Coat fish pieces in dry ingredients. Dip fish pieces into egg, then roll in sesame seeds. Place on lightly greased baking sheet and bake for 25 minutes, turning once after 15 minutes, until crisp and golden.

In a small bowl, mix soy sauce and honey. Pour over fish sticks.
